We conduct advanced research on food matrices and food contact materials, developing methods to identify and quantify contaminants and additives in raw materials and finished products. We study food-packaging interactions, evaluating degradation and migration, and designing active packaging with antimicrobial and antioxidant properties.

Analytical Methods & Traceability

We develop and validate multi-class methods for critical contaminants (such as PFAS and inorganics) and elemental speciation. We apply chemometrics, metabolomics, and elemental analysis to: 

  • Ensure the authenticity and traceability of food and wine products; 

  • Combat food fraud; 

  • Implement rapid, non-invasive spectroscopic techniques for in situ process control.

We perform proteomics studies for allergen monitoring, characterization of functional proteins, and the study of the relationship between protein structure and functionality.
